Best Pan "fried" chicken ever

from 6/2011 Bon Appetit


6-12 bone-in, skin-on chicken thighs
salt and pepper
1 Tablespoon vegetable oil


Preheat oven to 475.

Season chicken with salt and pepper.

Heat oil in 12" cast-iron skillet over high heat until hot but not smoking.

Nestle chicken in skillet, skin side down, and cook 2 minutes.

Reduce heat to medium-high. Cook about 12 more minutes until fat renders and skin is golden brown.

Transfer skillet to oven and cook 13 more minutes.

Flip chicken and cook 5 minutes more.

Transfer chicken to plate and let rest 5 minutes before eating.
